Bulgur With Chickpeas & Tomatoes Recipe

Bulgur Wheat


Bulgur wheat, also called cracked wheat, is a whole grain that is high in fiber. One cup of cooked bulgur contains more than 8 grams of fiber. Dietary fiber provides multiple benefits to your body. Not only does it help regulate blood sugar, but it also blocks the absorption of cholesterol and fills you up, which can help with weight loss. Men should try to get at least 30 grams a day, while women should get a minimum of 20 grams of fiber per day.

Bulgar is popular in Middle Eastern cuisine and is used in tabouleh salad or as a main dish. Here’s the recipe for bulgur with chickpeas and tomatoes.

Recipe

Ingredients:

  • 4 tablespoons oil
  • 1 medium onion, chopped
  • 2 medium tomatoes, peeled & minced
  • 1 (15 ounces) can chickpeas, drained
    1⁄2 teaspoon salt
  • 2 tablespoons parsley, minced (or 2 tsp dried)
  • 1⁄2 teaspoon salt
  • 1 cup Bulgar wheat (cracked wheat)

Directions:

  1. Heat oil over medium heat.
  2. Stir & saute onion 2 minutes until soft.
  3. Add tomatoes. Stir and cook 3-4 minutes until pastelike.
  4. Add chickpeas, 1/2 tsp salt, & parsley. Cook 10 minutes on a lowish heat, stirring gently.
  5. Add bulgur, 1 cup water, & 1/2 tsp salt. Stir & bring to a simmer.
  6. Cover, turn heat to very low & simmer 35 minutes.
  7. Turn off heat. Remove lid & quickly cover the pot with a dish towel.
  8. Enjoy
