Banana Split – Healthy Breakfast for kids

Here’s a fun twist to a yogurt parfait that kids (and big kids) will love. I started off by making my boys the mini version (using half of a banana) and they came back for more.

This banana split provides a nice mix of protein, complex carbohydrates, fiber vitamins, and minerals.

Recipe:

  1. Peel banana, and slice in half (longways).
  2. Place the banana in a bowl and open up the sides so that it’s ready to fill.
  3. Add any or all of the following ingredients: non-dairy yogurt (I used cashew yogurt), dried fruit (I used raisins), dry cereal (I used gluten-free flakes), fresh fruit (I used chopped apples), nuts (I used toasted pecans), drizzle maple syrup or honey (totally optional since this recipe is naturally sweet already).
