Butternut squash cubes (with olive oil and salt).
I roasted in the oven for about 30-40 minutes at 400 degrees F (mix them around half-way through roasting).
Today, I’m adding them to risotto I made.
Other days I add them to salad, pizza, tacos or soup. Butternut squash is packed with vitamin A, delicious, and an easy way to boost the nutrient density of any meal.
