Party Theme Apple Cupcakes – Healthy and Vegan

These are a definite show stopper and have the teachers and kids asking for more.

I’ve made these healthy apple cupcakes each year for my kids class parties. I switch up the toppings based on the occasion or holiday theme.

Apple Cupcakes Recipe:

Prep time: 10 minutes

Ingredients:

  • cupcake holders/wrappers
  • plastic knives
  • apples
  • small plates
  • cream cheese (can substitute with vegan cream cheese)
  • napkins
  • dried cranberries
  • granola (nut-free in case of allergies)
  • *If I’m feeling extra fun, I’ll add a few sprinkles to add to the party theme.

 

Preparation

1. Cut apples into halves (cutting width-wise so that each apple half has either the stem or the bottom of the core.) Cut out seeds.
2. Wipe the cut side of the apple with the napkin to soak up any extra liquid.
3. Spread cream cheese evenly over the cut side of the apple.
4. Place apple half cut side up into cupcake wrapper.
5. Decorate with granola, and any additional toppings you may have provided.
