Spaghetti and Vegan Meatballs
This was a big hit in my house and a recipe I will definitely repeat. I followed the recipe from Minimalist Baker.
These vegan meatballs are made with tempeh which is a fermented soybean product.
It is high in protein, fiber, and vitamins and is used as a meat substitute. I have a food sensitivity to wheat and therefore can’t tolerate the meat substitutes made with wheat gluten so I especially like these meatballs. I substituted the bread crumbs for gluten free bread crumbs and served the meatballs on top of spaghetti rice noodles.
