Fava Beans Healthy Dish
When my husband’s starving after work for something hearty and I’m in a bind, “fool” (fava beans) is my go to quick fix. This Middle Eastern dish is made with canned fava beans, garlic, lemon, cilantro, olive oil, cumin and salt. Fava beans are high in fiber, protein, and
folate. Folate (also known as vitamin B-9 and folic acid) is important for proper brain function and plays a role in mental and emotional health. Folate occurs naturally in dark green leafy vegetables, dried beans and peas (legumes), citrus fruits and juices.
