My Vegan Easter Food Leftovers.

Here’s a little sampler platter of my vegan Easter leftovers. Lucky for me, there are always plenty of naturally vegan options in the Lebanese cuisine we serve at most of our family get-togethers. From the top moving clockwise we have: pumpkin kibbe (kibbe is typically made with beef, but there are also pumpkin and potato versions), butternut squash pesto lasagna with vegan cheese sauce (obviously not a Lebanese dish); vegan stuffed grapeleaves (aka “arish” or “warat anab), and lima bean salad with mint, garlic, lemon and olive oil (aka fasoulya mtabaleh).
