Lentils and Swiss Chard Soup – Healthy Vegan Dish
These healthy lentils and Swiss chard soup will make you feel like a million dollars. It’s easy, and simple and is on time for lent ( and vegan people).
Lentils and Swiss Chard Soup Recipe
- 1 cup of lentil,
- 4 cups water,
- 1 bunch of Swiss Chard chopped (leaves and stem apart),
- 1 potato cubed (optional),
- 1 medium onion chopped,
- 4 to 5 garlic cloves diced,
- 1 tsp dried mint,
- 4tbsp fresh lemon juice,
- salt 1tsp and allspice 1/4tsp or to taste.
Boil lentil with onion and potato till almost tender, then add Swiss chard chopped stem, then Swiss chard. When lentils and potatoes are tender, add the diced garlic, mint, lemon juice, salt and allspice. Enjoy
