Quinoa Tortillas – Gluten Free Recipe

This quinoa tortilla recipe is for all of my gluten free/wheat free friends out there, or friends that just want a great tasting, healthy alternative to regular tortillas. Quinoa is gluten-free, high in protein, and one of the few plant foods that contain all nine essential amino acids. It’s also a good source of fiber, magnesium, and B-vitamins.

These tortillas are so delicious and can be used for sandwiches, tacos, and mini pizzas. My friend @claudiabachoura shared this recipe with me and I had to spread the word 🙂

Recipe:

  1. 2 cups of quinoa soaked overnight. Add a little salt. Rinse the quinoa several times before soaking and after, otherwise it will taste bitter.

  2. On the next day, rinse the quinoa very well and place in blender with enough water or vegetable broth to make a pancake batter type consistency.

  3. Start with 1/2 cup of water or vegetable broth and keep adding until you get right consistency. I also add a little lemon juice.

  4. Add salt and other flavorings (optional). You can use some or all of the following: garlic, oregano, paprika, and coriander.

  5. Preheat pancake griddle or pan and pour the batter as if you are making pancakes. I used an olive oil spray on the griddle before pouring the quinoa batter.
    *You can also try to bake them in the oven by pouring the batter on a preheated sheet pan.

  6. I use a spoon to spread the batter so it’s thin and round. Once it browns turn it over.

  7. Test out a few at different temperature settings and cooking times. I like them crispy but some people like them soft.
